Canning......and More Canning!

Canning season is officially in full swing! My one cucumber plant has apparently mutated into the most productive plant ever. I'm serious! This picture shows the cucumbers I picked after only 3 days! Not only are they growing faster than I can believe, there are literally tons of them everywhere. Not that I'm complaining! I am going through garlic and dill so fast it's unbelievable. I have about 20 quarts of pickles already sealed in jars, and that is even before I took this picture.... and before I go back on Wednesday to pick even more! I do have a few jalapeƱos that I am going to try a little experiment with. I want to try making some Hot Pickles this season. I'm going to slice up some jalapeƱos and stick them in a couple jars of dill pickles. We'll see! Hopefully I don't burn anyone that tries them up. There are a ton of Roma tomatoes that are green and will soon be ready for salsa. I'm going to tweak my recipe a bit this year. I'm not using chili peppers for one, and I'm going to add a bit more cilantro. I'm so excited that everything is going so well though. I did lose a lot of plants due to bad weather and the dang dog, but what I do have left is doing well. I'll keep you informed! If any of you are having issues this year with your gardens let me know! My peppers are stunted for some reason... I didn't know if it was a fluke or something I did wrong. I'm going to start looking into a place at the farmers market. If anyone has any info on that let me know as well!
